The most flavourful expression of Sardinia's ancient bread tradition. Pergamena di Pane Guttiau al Rosmarino is a rectangular sheet of paper-thin, crispy, golden flatbread made with just four ingredients — durum wheat semolina, water, yeast, and salt — then seasoned with olive oil and fragrant rosemary before a final browning in the oven.
The name guttiau means "dripped" in Sardinian dialect, referring to the olive oil that soaks into the bread — making it a more flavourful and aromatic variant of the classic Pane Carasau. Not fried, but baked. Crispy, lightly salty, and utterly addictive.
By virtue of its remarkable versatility, it pairs beautifully with everything: salami, cheeses, meat, fish, jams, and even chocolate. A three-generation Sardinian bakery tradition, following a recipe dating back to 2,000 BC.
